We've had numerous requests for the cake featured in Olivia Henriksson's leather shoot, so she kindly shared the recipe for her Poppy Seed Cake with us. Made with almond flour, lemon, and poppy seeds. Fill it with your favorite compote or cream and top with meringue for a delicious treat!
• 3 eggs
• 450g sugar
• 200g almond flour
• 160g all-purpose flour
• 225g whole milk
• 165g butter
• 1 tsp salt
• 1 pinch vanilla powder
• 5 tbsp poppy seeds
• Zest and juice of 1–2 lemons
Preheat the oven to 175°C (347°F). Brown the butter, then add the milk and sugar. Let it simmer for a few minutes to create a caramel-like sauce. Combine with the rest of the ingredients. Pour the batter into a greased and floured pan, and bake for about 30–40 minutes.
Fill the cake with any compote of your choice. I used a plum compote I made from plums I picked last summer. You can also fill it with cream cheese frosting or lemon curd. Finally, cover the cake with meringue and enjoy!
